My family’s eyes are always bigger than our stomachs on Thanksgiving!  We get stuffed on a lot less than we think we will, but we love having leftovers the next few days after Thanksgiving!  Utilizing the leftovers makes all that prep time worth it since we can eat the same meal for a few days.  The important thing about Thanksgiving leftovers is to change it up a bit.  Those Turkey or Ham Bones can be made into a stock.  The potatoes can be made into a soup and the Turkey, Mashed Potatoes and Stuffing can be made into these delicious Hand Pies!   My middle sister has deemed these Hand Pies her favorite thing ever… and she is the pickiest eater of us all! 🙂  Good thing is that they are SO easy to make!

While your prepping for your Thanksgiving meal make sure to grab a couple of extra pie crust dough packs.   I use the kind that roll out instead of the ones that are already in the pie tins since these hand pies do not need tins.  Just cut the pie dough into 4 or 5 even squares and spread a little mashed potatoes, gravy, turkey and stuffing  onto one side of the square. Each pie can hold about 1 to 2 tablespoons of filling.

Then fold the dough over and press the sides with a fork.  I brush mine with a little egg wash and bake at 350 for 15 minutes or until they are starting to brown.

Of course… you may like these so much that they make their way to the Thanksgiving table itself instead of the next day!  They really are that good!  Enjoy!

Ingredients

  • 1 package of 2 ready to roll pie crusts, mine were Pillsbury
  • Leftovers of:
  • Turkey, cut into small peices,
  • Gravy
  • potatoes
  • stuffing
  • ***You can also substitute the turkey with ham

Instructions

  1. Just cut the pie dough into 4 or 5 even squares and spread a little mashed potatoes, gravy, and stuffing onto one side of the square. Each pie can hold about 1 to 2 tablespoons of filling. Then fold the dough over to make a triangle and press the sides with a fork. I brush mine with a little egg wash and bake at 350 for 15 minutes or until they are starting to brown.
