Trying to please the palates of 6 people is a hard task most days.  At least one of my kids sighs or groans about what I am serving at any particular time.  Even the baby has started a “picky stage”.  I can’t really complain all too much because I know there are some parents that have it a lot worse, but I can relate to the feeling of not being excited to cook if not everyone loves it.  One of the things that my kids tend to love at all times is soup.  So now that I know the secret to happy meal times I make soup as often as possible.  This Quick and Easy Chicken Tortilla Soup is perfect for nights when I don’t have a lot of time to cook, but need a tasty soup to serve to my family.

There isn’t many a soup that can compare to the mighty Chicken Tortilla Soup. This one isn’t true to a traditional version, but it’s just as delicious!   I used the Campbell’s Soups for Easy Cooking in the Mexican Tomato flavor and it made this soup so good.

You can find the Campbell’s soups for easy cooking at Walmart.  Here is where I found mine in the soup isle!  They are small boxes so keep that in mind when shopping.  Be sure to check out this $.75 coupon on Walmart.com which starts on March 13th 2015 and is valid for 1 month!

Quick and Easy Chicken Tortilla Soup

Ingredients

• 1 box of Campbell's Soups for Easy Cooking in Mexican Tomato
• 1 15 oz . can of fire roasted tomatoes, do not drain
• 4 cups chicken broth
• 1 15 oz . can of black beans rinsed and drained
• 1 cup shredded cooked chicken, I use chicken from a rotisserie chicken for this to make it easy
• 1/2 tsp . garlic
• 2 tsp . chili powder
• 1 small onion chopped
• 1 bag tortilla strips
• suggested toppings:
• cheese
• tomatoes
• avocado
• lime wedges for spritzing
• cilantro
• sour cream

Instructions

1. Add all ingredients except tortilla strips and toppings to a large pot. Bring to a boil and then turn the heat down to a simmer. Simmer until the onions are translucent or about 25 minutes. Serve with your choice of toppings. Makes 5 to 6 servings
