Trying to please the palates of 6 people is a hard task most days. At least one of my kids sighs or groans about what I am serving at any particular time. Even the baby has started a “picky stage”. I can’t really complain all too much because I know there are some parents that have it a lot worse, but I can relate to the feeling of not being excited to cook if not everyone loves it. One of the things that my kids tend to love at all times is soup. So now that I know the secret to happy meal times I make soup as often as possible. This Quick and Easy Chicken Tortilla Soup is perfect for nights when I don’t have a lot of time to cook, but need a tasty soup to serve to my family.
There isn’t many a soup that can compare to the mighty Chicken Tortilla Soup. This one isn’t true to a traditional version, but it’s just as delicious! I used the Campbell’s Soups for Easy Cooking in the Mexican Tomato flavor and it made this soup so good.

What I really love about these soups is that they add a depth of flavor that I could only recreate by slow simmering a soup for a long time. It’s nice to just pour in the Campbell’s Soups for Easy Cooking and have a quick meal that tastes like it took all day to make!
Quick and Easy Chicken Tortilla Soup
- 1 box of Campbell's Soups for Easy Cooking in Mexican Tomato
- 1 15 oz . can of fire roasted tomatoes do not drain
- 4 cups chicken broth
- 1 15 oz . can of black beans rinsed and drained
- 1 cup shredded cooked chicken I use chicken from a rotisserie chicken for this to make it easy
- 1/2 tsp . garlic
- 2 tsp . chili powder
- 1 small onion chopped
- 1 bag tortilla strips
- suggested toppings:
- lime wedges for spritzing
- sour cream
- Add all ingredients except tortilla strips and toppings to a large pot. Bring to a boil and then turn the heat down to a simmer. Simmer until the onions are translucent or about 25 minutes. Serve with your choice of toppings. Makes 5 to 6 servings
