I was thinking of Easter candy and these truffle eggs came to mind. They are so elegant and perfect for Easter and springtime. Who says that candy is just for kids???
Birds Nest Truffles
Ingredients:
For eggs:
White Chocolate chips- 6 oz. or about a cup
butter- 5 Tbsp. cut into cubes
Heavy Whipping Cream- 3 Tbsp.
pinch of Kosher salt (or table)
Wilton food color paste in desired color
optional: flavoring- I used coconut and vanilla
Cocoa Powder for the speckles

For nests:
9 oz. chocolate chips
1 can chow mein noodles.
Directions:
Start making eggs by mixing white chocolate chips, butter, heavy whipping cream and salt. Heat in the microwave in 30 second intervals making sure not to scorch the chips.
Once melted stir in food coloring and flavorings.
Cool in the refrigerator for 2 hours or until it comes out like this…
Mold quickly into eggs. Make sure to roll them quickly or they will melt in your hands! Put back in the fridge. Notice how big they are next to a jellybean. Now dust these with Cocoa Powder for the speckles by pinching a little into your fingers and rubbing them over the eggs.
Now it’s time for the nests… Melt chocolate in the microwave in 30 second intervals until just melted. Mix the chow mein into the chocolate and fill up a mini muffin pan with the mixture.
Chill until they are hard. Pop them out with a knife and put the eggs on top of the nests. So ADORABLE!
They were obviously a BIG hit! LOL
