Memories are funny things. I often wonder what my girls will remember about their childhood. Will they remember running outside in the sprinkler on hot days? Will they remember their first baby doll or favorite story book? When I look back at the things I remember growing up I have to chuckle a little bit. I remember the night before any special occasion my sister and I would sit at my mom’s feet and get our hair rolled up in pink hair rollers. I remember the green shag carpet that was in my room. I also remember my mom making Taco Salad in the big Mint Green Wonderlier Tupperware Bowl. It’s memories like these that I want to remember as long as I can. That is why I keep making more and more Heirloom Recipes. They are keepsakes that I hope my children and grandchildren will enjoy for years to come!
Mama’s Taco Salad! It’s messy and it’s not authentic Mexican, but I love it! My mom not only made this on week nights, but it was her “go to” dish to bring at any potluck. She’s not really sure where she got the recipe, but over the years she has made it her own. This is great enjoyed on it’s own or served at any potluck dinner!
Mama's Taco Salad {Heirloom Recipe}
Ingredients
- 1 head of lettuce chopped
- 1 pound of ground beef
- I packet of Taco Seasoning
- 1 Can of "Ranch Style" Beans
- 2 Large Tomatoes cut into cubes
- 1/2 small onion chopped
- 1 cup of shredded cheddar cheese
- 1/2 bag of corn tortilla chips slightly crushed
- optional*
- 1 16 oz . bottle of Catalina or Tangy Bacon Catalina, my fave
Instructions
- Take the Taco Seasoning and ground beef and make the ground beef according to the package of taco seasoning- then set aside to cool off. Heat the Ranch Style Beans in a covered microwave safe dish in the microwave on high for a couple of minutes or until heated through- set aside to cool. Make sure that the beef and beans are not piping hot so that they do not wilt the lettuce.
- Add lettuce to a large bowl. Then pour the taco meat and beans onto the lettuce. Add the rest of the ingredients to the bowl and mix up until combined. You can add the Catalina to the mixture or have everyone pour their own Catalina. You can also have the chips on the side instead of mixed in which will keep them from getting soggy.

My momma used to make something like this too. She even had the big Tupperware bowl. I wonder too what my kids will remember about me. I bet it has something to do with food!
