Stuffed Mushrooms Low Calorie

I wanted to change things up a little bit this week and show you a recipe that I have come to love since starting Nutrisystem.  It  uses 1 string cheese, 5-6 mushrooms, chopped onion, salt/ pepper and a little dried or fresh basil!   On Nutrisystem I am encouraged to eat as many veggies as I want.  I like to be creative with my veggies!    The string cheese is allowed on the plan as an additional protein and it tastes so good with the mushrooms!  It is also a very generous portion… 5 stuffed mushrooms are only 75 calories!

75 Calorie Stuffed Mushrooms

make 1 serving

Ingredients

  • 5-6 whole button mushrooms
  • 1/4 cup of chopped onion
  • 1 reduced fat string cheese
  • salt and pepper to taste
  • basil for garnish

Instructions

  1. Wash mushrooms to get any dirt off. Take stems off of the mushroom and chop the stems. Cut the string cheese into 5 or 6 pieces and stuff into the mushroom caps. Top mushrooms with the onion and chopped mushroom stems. Put mushrooms into a muffin tin. Bake at 400° for about 15 minutes... when they are done the onions should be cooked through and the mushrooms should release their moisture. Serve and enjoy!

As far as this week goes I had another loss!  I am happy that they scale is always going down… slow and steady.  I would have loved to see that 10 pound mark, but I should see it soon!    I am SO close I can taste it!

This week was a good one except I didn’t get in enough exercise- something that I need to work on.  This weekend I am heading off to a Blogging Conference in which I will be speaking!!! WOW!  It’s going to be SO fun!   I am a little concerned that I don’t know what food will be served, but I think I can handle it with a little portion control.  One weekend won’t hurt my diet for good… I just have to remember to always get right back on track.
