Acorn Mini Parfaits with Teeny Tiny Acorn Bites

I just got back from the woods and look what I found!!!

OK, maybe I didn’t really find these acorns in the woods (lol) but they do look just as cute!   I am officially obsessed with all things mini!!!  I have been wanting to make some of the Cookie Kiss Acorns for the longest time and when I finally got around to it I came up with these Mini Acorn bites using chocolate chips and mini cookies!!!

I really like the mixture of the big and little acorns!

For the parfait I used the mini acorns layered with a cut up ice cream sandwich.  On top I used whipped cream and more acorns… so fun! For serving I used 2.5 ounce parfait glasses which you can find here (affiliate).

To make the mini acorns I used different flavors of chocolate chips for the base and the tops were Keebler GRIPZ  mini cookies.  SO cute!  For the bigger acorns I used Hershey’s kisses and Keebler Mini Fudge Stripes (affiliates).  On top I used a little mini chocolate chip.  I also discovered that Hershey’s now makes Cinnamon chips (affiliate)!! They are the orange colored ones that you see…they are SO good!  The caramel icing (which is just a flavor mix in by Duncan Hines) I used to “glue” all the pieces together.

These are so festive and could be used throughout the fall season.  You can bag em up and give them as gifts too!  They are so adorable!
