Have a fun Halloween party coming up? This Monster Eye Avocado Egg Salad will be perfect to serve! My kids and I loved this fun way to serve egg salad and the recipe is amazing! The avocados make this egg salad really creamy and delicious.
Monster Eye Avocado Egg Salad
Ingredients
- 5 large eggs hardboiled
- 2 medium avocados
- 3 Tbsp . ranch dressing
- 1 green onion chopped
- 1 small can sliced olives
- 1 tsp . salad vinegar or red wine vinegar
- dash of salt
- optional serving suggestions:
- sliced bread
- veggies
- crackers
Instructions
- Chop 3 of the eggs and place in a medium sized bowl. Peel the avocados and take out the seeds. Add the avocados to the eggs. Add the vinegar, ranch dressing, onions and a dash of salt. Mash and stir it all up until it's somewhat creamy, but still has a few chunks. Pour mixture onto a serving platter.
- Next take the 2 leftover eggs and thinly slice them into rounds. These will be the base of the eyes. Place the sliced eggs on top of the avocado egg mixture and then add sliced olives to the inside of each egg slice. Serve with bread, veggies or crackers. Enjoy!
