 One of my earliest childhood memories is sitting on top of the counter in the kitchen and mixing up cookie dough with my parents.  We always made cookies often during the holidays.  When I smell the aroma of cookies baking I am brought back to those memories.  I love to bake cookies with my kids during the holidays so they can share in those memories with me!  These Mini Chocolate Peanut Butter Oatmeal Cream Pies are one of our new favorite cookies to bake.  The Quaker whole grain oats, peanut butter and chocolate chips are a comfort food for me.  They are so good!

I thought I would try my hand at a new recipe for this holiday season using the Oats I bought at Target.  These mini cream pies are the perfect size for gift giving, holiday pot lucks or just to have for dessert at home.  The cookie part by itself tastes great, but the peanut butter cream inside is a nice finishing touch.  You can omit the peanut butter if needed for a peanut allergy.

I love how these turned out!  We served them at a party recently and I should have grabbed one for myself before they were gone!!! Good thing I will be making these again soon! 🙂

Mini Chocolate Peanut Butter Oatmeal Cream Pies! {Oatmeal Recipes}

Mini Chocolate Peanut Butter Oatmeal Cream Pies! {Oatmeal Recipes}

Ingredients

  • 1/2 cup sugar
  • 1/2 cup dark brown sugar
  • 1 egg
  • 1 cup of Quaker Old Fashioned oats
  • 2/3 cup all purpose flour
  • 1/2 cup softened butter
  • 1 TSP vanilla
  • 1/2 cup mini chocolate chips
  • 1/2 TSP baking powder
  • For the peanut butter cream:
  • Equal parts of peanut butter and whipped canned icing mixed together

Instructions

  1. Preheat oven to 350°. Cream together softened butter, egg, sugar, and brown sugar. Slowly add in flour and baking soda. Mix well and add vanilla and oats. Once combined add mini chocolate chips and stir until combined. Place drops of dough that are around 1 tsp. onto a cookie sheet. Bake for 10 minutes or until the edges are starting to turn golden brown. Place cookies on a cooling rack and let them cool before adding peanut butter cream. Sandwich the cookies together with the peanut butter cream and serve. Makes around 24 mini sized cookies.
