Easy Vanilla Latte Cupcakes

How do you take your coffee?  I like mine with lots of fluff!  I love a good tall Vanilla Latte with whipped cream…mmm… sounds tasty!  I was wondering the other day if I could mimic the taste of a vanilla  latte in a cupcake so I came up with these yummies.   They are so good!   They have a subtle coffee flavor and lots of vanilla.  Best part is how easy they are to make.  I know that I usually make things from scratch, but it was just one of those “Betty Crocker in a box” kind of days! 😛

Vanilla Latte Cupcakes

What you will need:

1 box of White Cake Mix and the ingredients on the box minus the water (my pref is Betty Crocker super moist)

strong brewed coffee to replace the water in the cake mix (whatever amount the box calls for)

Instant Coffee (I prefer Maxwell House International Cafe “cafe Francais” flavor- in the little box)

Whipped Icing (in the can- again I prefer Betty Crocker)

Now on to make it!

Just mix your eggs, coffee, and oil (or butter if your cake mix calls for that)  all together!  Simple.

Use the directions on the box to bake… usually 350 for 18-20 minutes… Now I will give you a little secret of mine.  I slightly fill mine more than 2/3 full.  They are more like 9/10 filled.  They will rise a little over the liners, but not so much that they overflow…

Once they are out since I filled them up so much- I take a spoon and press down (lightly) on them with it.  You may be wondering why I would go through so much trouble when I could just fill them with less batter.  I don’t know why, but the cupcakes that I overfill and press down are a little more dense (not too much) and much more moist!  Try it out!!!  This is a trick that my mom would use making cakes all the time… hers always got raves.  You’ll just have to trust me!

Now on to the icing.  Take your instant coffee and measure 1 Tablespoon and mix that with 1/2 tablespoon of water.  Then mix that into your can of icing.  Now you have the perfect topping for the cupcakes… Just frost them (once they cool down) and serve!

You don’t have to pile the icing so high like this, but it makes for a pretty picture… and a coffee bean on top of course! 😛

Oh and do you see the guy drinking his coffee up above??? That was TOTALLY unplanned!!! LOL

I love playing with cake mixes, too. Sometimes you ARE just in a Betty Crocker mood! But those are pretty--and I think I'll try your spoon-mashing trick. I've always inclined more toward dense and cakey over light and fluffy, myself!
