Crispy Oven Fried Chicken and Mashed Potatoes

Sunday was always the day of the week that my mom went all out and made us a delicious homestyle meal.  One of our favorite meals when I was growing up was crispy oven fried chicken.  Now that I am grown I love to make this yummy dish for my own family.  It has a great taste and crunch that we all love.  I like to serve this dish with a side of mashed potatoes.  Our favorite easy mashed potatoes are Idahoan Signature Russets!  This combination makes any day taste like a Sunday!


The reason I choose Idahoan Signature Russets as a side is because more than six pounds of premium Idahoan russet potatoes  go into every 16 oz. pouch.   These mashed potatoes have a  nice smooth taste  like original homemade mashed potatoes with  just a hint of butter and cream.  Idahoan Signature Russets can be made in  only five minutes  using milk and butter…or just water!  What I love the most is the re-sealable pouch, which keeps them fresh and available for a Sunday mashed potatoes experience any day of the week.


Now for the crispy oven fried chicken… it’s really easy too!  Grab two bowls and your chicken and the rest is just dredging and seasoning.

Crispy Oven Fried Chicken and Mashed Potatoes


  • 1 cup breadcrumbs
  • 1/2 cup AP flour
  • 1/2 Tbsp . paprika
  • 1 tsp . salt
  • 1 tsp . pepper
  • For the wet ingredients:
  • 1/2 mayonnaise
  • 1/2 cup sour cream
  • 4 chicken legs and 4 chicken thighs with or without skin


  1. Preheat oven to 350 degrees F. In one medium bowl mix mayo and sour cream. In another medium bowl mix breadcrumbs, flour, paprika, salt and pepper. To add the coating to the chicken just spread the mayo mixture thinly onto each chicken piece first and then completely coat each piece with the dry mixture. Place onto a baking sheet and bake for around 30 minutes on one side and then turn each piece over and cook for another 30 minutes. Chicken is done when juices are clear and temps inside chicken reach at least 180 degrees F
