I think I have always had a love for cooking. I remember being very young and begging my mom to let me “help” her in the kitchen. When I was a little older I would always wondered why my mom didn’t like cooking much because I loved to rummage through cookbooks and dream about what to make for dinner. Now that I am older I can relate to the way my mom probably felt all those years making dinner after dinner. I still love to cook, but the weekday cooking can be hectic. For the weekdays I like to stick to meals that taste great and take less than 30 minutes to cook. This Creamy Chicken and Mushroom Pasta Bake is the perfect blend of fast and tasty!
You may remember that I found the Campbell’s Soups for Easy Cooking at Walmart and used the Creamy Herb and Garlic to make Chicken Pot Pie Soup. The recipe for that turned out so great that I went ahead and bought the Campbell’s Soups for Easy Cooking in the Savory Portobello Mushroom flavor to try in the Chicken and Mushroom Past Bake. When looking for the Campbell’s Soups for Easy Cooking keep in mind that they are small cartons that are slightly bigger than a normal sized can of soup (see picture).
The flavor was perfect for this dish!

Creamy Chicken and Mushroom Pasta Bake
- 1 carton of Campbell's Soups for Easy Cooking in Savory Portobello Mushroom
- 3 cups of cooked pasta
- 1 cup sliced mushrooms portobello or button
- 1 cup cooked and diced boneless chicken
- 1 cup shredded mozzarella cheese
- optional parsley for sprinkling on top
- Butter a 9X13 inch casserole dish and pour in the 3 cups of cooked pasta. Add in the rest of ingredients except parsley and stir to combine. Bake at 350 degrees for 5 to 20 minutes or until the cheese is bubbling and starting to brown on the edges. Sprinkle chopped parsley on top if desired and serve while hot. Makes 6-8 servings.
This was a big hit with my family! Certainly a dish that we will be making again.
