Ok.. when I first heard of beans for baking I thought it would be really gross. I tried it anyway. It was good! No, it was great!!! 🙂 I wanted to make a healthier version of chocolate chips cookies and here is what I came up with… now please note that the texture and taste are not exact, but it is still delicious.
Chocolate Chip Oatmeal Cookies (super healthified)
Ingredients
1/2 cup wheat flour
1/2 tsp baking soda
1 can White Northern Beans
1/2 cup Rolled Oats
1/4 cup brown sugar
2 Tbls. all natural applesauce
4 packets Truvia or other natural sweetener
1/4 cup dark choloate chips
Directions
Preheat Oven to 350.
Drain white beans and pour into a blender. Put 2 Tbls. of water into this and blend to a puree. Pour puree into a mixing bowl and add in the egg, brown sugar, truvia, applesauce, and vanilla. In another bowl mix both flours, rolled oats, and baking soda. Slowly pour dry ingredients with the wet and stir until well mixed then fold in chocolate chips.
Next spoon out mixture in 2 Tbs onto cookie sheet. Bake in oven for about 15 minutes or until just browning. Let cool then enjoy!!!!
