A few years ago my family discovered what would become a family favorite at a “greasy spoon” in my hometown. My mom and sister were insistent that they would figure out the recipe for this delicious breakfast dish. The restaurant calls it “Breakfast Delight” and name suits it well.
This Breakfast Delight Skillet has hashbrowns, eggs, ham, onions, cheese and is served with salsa (and sour cream if you want it)! I know this dish will be delighting my family for years to come!

I start the skillet up with a little oil and add the veggies/ hashbrowns first and cook them until golden. When it’s ready I add the eggs, ham and cheese evenly. No need to stir just cover and cook until eggs are fully cooked.

- 1 cup shredded potatoes for hasbrowns
- 1 Tbsp. olive or vegetable oil
- 1/4 cup chopped onions
- 1/4 cup chopped red peppers
- 1/4 cup cubed ham
- 1/4 cup shredded cheddar cheese
- 3 large Eggland's Best Eggs beaten
- optional salsa and sour cream
- Heat the skillet with the oil on medium heat and add shredded potatoes, onions, and red peppers. Cook until the mixture is turning brown and veggies are softened.
- Next add the eggs, ham and cheese. and cook until eggs are bubbling and fully cooked. Serve and enjoy!
