Sometimes I just get a craving for one of my favorite comfort foods… blueberry pancakes! One thing that I have learned on my weight loss journey with Weight Watchers is that I need to have protein with every meal. Breakfast is especially important for protein, but I don’t always feel like eating typical protein breakfasts like eggs and meats. That’s where these pancakes come in. They remind me of the blueberry pancakes I grew up with, but these are high in protein to keep me satisfied for much longer. These are so delicious and I could eat them everyday!
These are also high in fiber which is also important to satiety. I remember the second coaching session I had with my Weight Watchers personal coach and she suggested that I eat breakfast everyday. I really took what she said to heart and have been making sure to eat a healthy breakfast. It really seems to get me off on the right foot for the rest of the day!
These Blueberry Oatmeal Protein Pancakes are a great way to start the day!
Blueberry Oatmeal Protein Pancakes 6WWP+
- 1 cup of ground oats to make your own run old fashioned oats through a blender or food processor
- 1 cup egg whites
- 1 cup berry flavored nonfat greek yogurt make sure it's sugar free- I used Oikos triple zero
- 1 cup blueberries
- 2 tsp . baking powder
- 1 tsp . vanilla
- 1 tsp . truvia or your favorite non calorie sweetener
- Blend ground oats, egg whites, baking powder, vanilla and yogurt together (preferably in a blender or mixer) until smooth. Heat griddle or non stick pan on medium heat and pour small rounds of batter onto griddle and add a few blueberries on top. Cook until each side is a medium brown (will be darker than normal pancakes). Eat right away or refrigerate covered.
- Serving suggestion: a small Tbsp. of whipped cream and sugar free syrup- this has already been added into the total WWP+
The best part about Weight Watchers is that I don’t have to worry about eating diet foods all day or saying no to everything. I can eat anything that I want and still lose weight as long as I am following the program. It’s so easy! It’s also shown me how to make better choices and I feel so empowered knowing how to have success. When I went to a restaurant the other day I used the Weight Watchers points to decide what I should get. I didn’t deprive myself of what I wanted, but I just made sure that it fit into my overall goal for the day.
