I made this last year at Easter and it was such a hit… I think it will be a regular! I cannot take credit for this recipe, but it’s one that has been out there for a while- so I do not know the original author! I got mine from Cooks.com.
BIRD NEST COOKIES
1/3 c. Karo syrup
1/2 c. brown sugar
3/4 c. peanut butter
1 tsp. vanilla
3 c. Rice Krispies
1 c. coconut or 4 c. Rice Krispies
Bring to boil, syrup, sugar, peanut butter and vanilla. Remove from heat. Stir in cereal and coconut. Let cool then shape into bird nest and fill with jelly beans (we filled with Cadbury Mini-Eggs) . Double recipe makes about 20 nests.
