It’s always a big deal when my parents come to our house to visit because we are usually the ones traveling to see them! My mom and I love to watch the show Chopped together when they come over and when I found out about the Chopped At Home Challenge with Sargento cheese, I knew that we had to cook up a meal using the 4 challenge ingredients. These 4 Cheese Mexican Bacon Wrapped Chicken Thighs were so amazing that my mom told me we had to make them again when we came over to see them next time! This is quickly becoming our favorite family meal.
The Sargento 4 cheese Mexican blend was great with this dish and melted perfectly in the chicken! I had a little predicament coming up with a way to use the corn tortillas and so I decided to fry them up to add a little crunch to the dish. I just crumbled them on top after the dish was cooked and it really added that finishing touch.
The 4 ingredients for this Chopped challenge are 4 Cheese Mexican Blend, Corn tortillas, Poblano peppers, and chicken thighs. When thinking of these ingredients I immediately thought of how much I like bacon wrapped chicken thighs and then I knew that a Tex Mex version would taste great!
Inside the chicken thighs I stuffed as much of the Sargento 4 Cheese Mexican Blend as I could and then on top of that I added chopped poblano peppers and onions. Then I wrapped everything up with bacon before cooking. The flavors worked perfectly together and everyone in our family loved this dish.
4 Cheese Mexican Bacon Wrapped Chicken Thighs
Ingredients
- 6 boneless skinless chicken thighs
- 6-12 pieces of thin sliced bacon
- 1 8 oz . package of Sargento 4 Cheese Mexican Blend
- 1 poblano pepper chopped
- 1 small onion chopped
- 1 small tomato chopped
- 6 corn tortillas cut into thin strips and fried
- salt and pepper to taste
Instructions
- Preheat oven to 400 degrees. Stuff the chicken thighs with 1 oz. of the cheese. Sprinkle in some onions, peppers and a little salt and pepper. Wrap each chicken thigh with 1 or 2 slices of bacon. Heat a large skillet on high with a little oil in the bottom. Add the bacon wrapped chicken thighs to the pan and brown the bacon on each side. Once the bacon is browned then put the skillet in the oven for around 15-20 minutes or until the chicken is cooked thoroughly. Add the rest of the cheese to the skillet at cook for another 3 minutes or until the cheese is bubbly. Take out and sprinkle with more peppers, onions, tomatoes and the fried tortilla strips. Enjoy!
