It’s the new year and everyone is talking about their resolutions.  I like to look back at the year before and make mental notes of things I want to do differently in the coming year.  Not really a typical new year’s resolution, but I think the sentiment is the same… trying to improve!  One thing I want to improve upon this year is eating more veggies and fruits.  I know I can achieve my goal if I focus on bold flavors and new recipes that incorporate more fruits and veggies.  The hardest time for me to eat more veggies is at lunchtime.  I work from home and am very busy during the day!  It’s hard to figure out how to make lunches that are both healthier and appetizing.  That’s where LEAN CUISINE® Marketplace meals give me the bold taste I want and take very little time to cook!  I am loving the LEAN CUISINE® Marketplace Sesame Chicken paired with my simple Vegetable Egg Roll in a Bowl recipe!

Vegetable Egg Roll in a Bowl

Ingredients

  • 1 16 oz . package shredded cabbage
  • 1 cup shredded carrots
  • 8 oz . sliced mushrooms
  • 1/4 cup chopped green onions
  • 1 tsp . garlic powder
  • 2 Tbsp . soy sauce
  • drop of sesame oil
  • premade wonton chips/ strips optional

Instructions

  1. Heat a skillet on medium heat and spray with a spray oil before adding all veggies, garlic powder, sesame oil and soy sauce together. Saute until veggies are soft. Add to a bowl and sprinkle on a few wonton strips if desired. Enjoy!

The Vegetable Egg Roll in a Bowl has all the flavor of an egg roll, but it’s much easier to make.  It’s also a much healthier option because it’s sauteed instead of fried.  I literally just throw the veggies in the pan with the sauces and a few minutes later I have a delicious side dish that pairs so well with the Lean Cuisine Marketplace Sesame Chicken!
