Confession: I LOVE iced coffee, but not just any iced coffee… only cold brewed iced coffee!!! Does that make me a coffee snob? I don’t know, but I DO know that I can taste a difference between the cold brew and the kind that is brewed hot. For me it has to do with the bitterness and the subtle flavors that are lost in the hot brew. So if you are like me and can’t stand any kind of bitterness in your coffee… come into the light my friend… try this out.
Vanilla Bean Iced Coffee
Once you have tasted the cold brew… you may never go back! Pair it up with some vanilla bean syrup and you will be in coffee paradise!!! This is so cheap and it makes enough to last about a week (unless you drink a WHOLE lot! :P). Who needs the fancy schmancy coffee shop? well… maybe not as much now!
What you will need:
for the coffee:
1 cup ground Coffee: go for your favorite brand espresso beans are good for this
8 cups water
For the syrup:
3 tbsp. vanilla extract (yes that is tbsp.!)
2 cups sugar
2 cups water
Start by brewing the coffee overnight… Just pour the water and the coffee into a pitcher and place in the refrigerator overnight.
The next morning take a strainer and a coffee filter and filter the coffee into another pitcher or container… It does filter slowly because there is a cup of coffee grinds in there!!! It’s that easy… you now can drink your coffee the way you like it!!! Now read on for my favorite syrup in the world… it of course contains vanilla beans (if you know me at all you know I love vanilla beans!!!)
Now on to the syrup… you know… one of the four main food groups (if you’ve seen ELF you know what I am talking about…lol). It really is just sugar, water and vanilla… no additives and 100% natural (not really healthy though… lol)
I love vanilla beans… did I mention that before? haha… you know I do. I used to be intimidated by them, but they are so easy to use. Just be sure you find good ones. I go to Amazon.com to find mine here
Just split in in half lengthwise and then scrape all the beans out! Now just put the beans and the pod into the pot with the rest of the ingredients.
Now once everything is in turn the heat on medium. The sugar should start to dissolve and finally become clear pretty quickly… Once it is clear turn the heat to simmer (don’t cook on medium too long). Simmer for about 10 minutes then let cool. Store in the fridge for 1-2 weeks…
Once it cools you can place in a container and you are ready for some awesome iced coffee. The amount is up to you… I like a lot of syrup and cream in mine! 🙂
