My perfect ice cream would be somewhere in between soft serve and regular ice cream. I love the creaminess of regular ice cream, but I also love the airiness of soft serve. I set out to combine my favorite textures into one ultimate ice cream and this Super Creamy Chocolate Ice Cream is definitely the best of both worlds.
The secret of this creamy ice cream is actually the chocolate milk that I used for it! Yes, that’s right… just good ole chocolate milk. I also used frozen whipped topping and sweetened condensed milk that adds airiness and a great flavor.
Chocolate milk has a special ingredient called carrageenan to help stabilize the chocolate and makes this ice cream possible. There has been a bit of confusion as to the safety of carrageenan, but it’s been deemed safe by regulatory authorities around the world including the United States, Europe, China, Japan and Brazil. It’s an ingredient that you could even extract in your own kitchen with simple kitchen tools. I really think that the carrageenan adds to the overall success of this recipe. If you need to know more about carrageenan visit Food Science Matters which has lots of info on carrageenan safety and other ingredients that are commonly found in food. Their mission is to inform the public about how food science makes food available for billions of people and how it allows us to produce and transport simple products such as milk, juice or ice cream. Without it, we would have severe food shortages because we wouldn’t be able to preserve or extend its shelf life, let alone perfect it. Just like this recipe for super creamy chocolate ice cream… yum!
I love that I can use simple ingredients to make this delicious ice cream! My family said it’s WAY better than store bought.
