Are there many things more phenomenal than a rainbow?  I remember last year (on the 4th of July) a brief storm went through my parents neighborhood while we were visiting them and when we looked outside there was the most beautiful rainbow right above us.  In fact, the end of the rainbow was literally in the field back behind their house!  You can see the video below shows what we saw… even though the real life experience was even better!  (Yes, I am a geek and you can hear us all screaming about this rainbow. lol)

 I have to admit that was probably the closest I’ve been to the “rainbow’s end”.  It was a lot of fun!  It literally looked like you could touch it!

That was the inspiration behind these fun St. Patrick’s Day Rainbow Cupcakes.  I wanted something that resembled a real rainbow with a see-through look.  I thought I would try gelatin and it actually worked!

Gelatin Rainbows!

I tried it with just straight gelatin first which worked really well.  You just take 1 packet of plain gelatin (Knox afiliate) and mix in 1 Tbsp. of water.  Heat it in the microwave for 15-20 seconds and then add some food coloring.  I used red, yellow and blue for the rainbows (separately).  Then paint on the gelatin to a plastic cutting board.  Paint it on pretty thick and quickly.  The gelatin starts to harden fast.  Just make it into the shape that you want and let it dry for a good 8 hours or so.  The rainbows did warp while drying, but I love how they look!  Very artsy! (These rainbows  really aren’t something that you will want to eat after they dry, though.  They are technically edible, but not very tasty.  I tried making these with Jello, but it came out too sticky.)

Irish Cream Filling!

I filled them up with Irish Cream and they tasted amazing!

Ingredients

  • I box green cupcake mix
  • 1 can green icing
  • Filling:
  • 1 cup heavy cream
  • 1/4 cup Irish Cream flavored Coffee Creamer
  • 1/4 cup powdered sugar
  • Decorations:
  • Rolos topped with Nutella and gold sugar sprinkles
  • gelatin rainbows, from instructions above
  • gold pearl sprinkles

Instructions

  1. Make cupcakes according to the package directions. Let them cool completely. Fill the cupcakes with the filling by scooping a small hole in the top with a melon baller or small spoon.
  2. To make the filling: Combine heavy cream and sugar into a mixing bowl. Whip on high until stiff peaks form. Fold in the Irish Cream and put filling into a piping bag fitted with a 1M tip. Filll the cupcake by sqeezing the filling inside.
  3. Top cupcakes with the icing using the 1M tip. Place the rolo (pot of gold) next to the rainbow and then sprinkle the gold pearl sprinkles on each cupcake. Enjoy!

Rainbow St. Patrick's Day Cupcakes! So cute and the rainbows are see through! Fun St. Patrick's day treat idea.

These turned out super cute and delicious!  I think these gelatin rainbows would be fun on a cake for a rainbow party too.  The kids can have fun painting their own rainbows or shapes if they want also.  (Just make sure the gelatin is not too hot).  They are sure to be a hit with anyone on St. Patrick’s day and once the green icing gets on your nose… well then you will be pinch proof too! LOL
