The recent surge of cooler air has made me excited for Fall coming and of course… everything that is pumpkin! I like pumpkin in many ways, but one way that I love is in savory dishes. Pumpkin Alfredo is simply an Alfredo sauce that is kicked up with a lot of pumpkin goodness.

I paired the pasta and sauce with Parmesan & Herb Chicken made using The Good Table® Parmesan and Herb sauce & crust mix. The Good Table® offers gourmet-style sauce and crust mixes to coat your protein of choice (chicken, fish, turkey, or pork) for a delicious main dish.

I love how the Parmesan Herb Chicken tasted with the Pumpkin Alfredo and I know my family will be asking for this meal again soon!

I find The Good Table® mixes at Walmart near the breadcrumbs. They have 4 different varieties and all of them are super easy to make.We obviously loved the Parmesan & Herb Chicken variety and we can’t wait to try all the other mixes too. I like using these as our main dish and serving with different sides like the Pumpkin Alfredo Penne Pasta.

This chicken could not be easier to make. The Good Table® Parmesan and Herb mix came with a creamy basil sauce that I dipped the chicken in first and then I coated it with the included parmesan and crust mix. The resulting chicken was cheesy and delicious! Of course you can serve it with any side, but my favorite side so far is this recipe for Pumpkin Alfredo Penne.

Pumpkin Alfredo Penne & Parmesan Herb Chicken

Pumpkin Alfredo Penne & Parmesan Herb Chicken

Ingredients

  • 1 can Pumpkin Puree
  • 1 Cup Heavy Cream
  • 2 Tbsp . Butter
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 tsp . garlic
  • 1/2 tsp . onion powder
  • a dash of fresh ground nutmeg and a sprinkle of pepper if desired
  • 1/2 tsp . salt or more to taste

Instructions

  1. Mix all ingredients together in a medium sized pot and cook on stovetop at medium low for around 15 minutes stirring constantly. Once the cheese is melted and sauce has thickened it is ready to serve. Serve on a bed of cooked penne pasta or another noodle variety you like.
