I remember when my best friend first got her driver’s license. We were so excited to roam around in her cute little Kia and we made sure to stop by our favorite snow cone shop near her house. I really never had many snow cones until I met her and she introduced me to the Creamsicle Snow Cone. It quickly became my favorite from that point on. The vanilla orange flavor combo is something I use in a lot of my recipes and I realized the other day that I had not made an ice cream cupcake version yet! That’s when these Orange Creamsicle Ice Cream Cupcakes were born. They are so amazing and remind me of the fun summer trips visiting my best friend.
To decorate the cupcakes I made these cute little popsicle decorations using orange Mike N’ Ikes that are stuck together by cutting them ever so slightly on the sides that touch each other and then inserted a toothpick into each one. I cut off the toothpick to resemble the mini size version of a double popsicle. These are great for bigger kids and adults, but small children should not have them unless an adult helps to take out the toothpicks.
Orange Creamsicle Ice Cream Cupcakes
Ingredients
- 1 orange cake mix with ingredients to make the cake, or Duncan Hines dreamsicle
- 4 cups Vanilla Ice Cream
- 1 bottle Smuckers Orange Magic Shell, I don't think they sell this anymore but you can use any of the Magic shell flavors you like or make your own using 1 tsp. orange flavor, a few drops of orange food color, 1/4 cup melted coconut oil and 1 Tbsp. sugar mixed together
Instructions
- Make cupcakes in liners with the cake mix according to the directions. Let these cool completely and when you are ready to serve take the ice cream and dish out small scoops that will fit right on top of the cupcakes. Add the Orange Magic Shell and the popsicle decoration if desired.
