Veggie “Goldfish” Cracker Recipe

My girls wanted to get in on all the crafty and cooking stuff that I do.  I thought “Why Not?”  Then we came up with the idea to video them doing the cooking and crafts…  Kare Bear is 5 (she is calm collected and artistic) and Pinkie Pie is 3 (she is a fireball as you will see!).  I thought they did an excellent job for their very first ever tutorial PLUS it was a video… are they not amazing!?!  Here is what they made:

these are not your typical Goldfish… they are so much better tasting and tons better for you!  Find out more nutritional info below…

Don’t ask me why I felt the need to add my own dialog in there… ugh… do I sound like that??? LOL This whole video cracks me up!

Ingredients
    * 1/2 cup Whole Wheat Flour
    * 1/2 cup all purpose or bread flour
    * 1 cup shredded 2% reduced fat Cheddar Cheese
    * 1 oz. block Parmesan Cheese
    * 1 handful of Spinach, fresh
    * 1/2 cup raw sliced Carrots
    * 2 Tbsp softened unsalted Butter
    * 1/2 tsp Paprika
    *1/2 tsp Onion Powder
    *water
Did I tell you that this was REALLY easy??? Well it is!!!!

 

Process carrots and spinach in food processor for a few seconds…
then add rest of ingredients and pulse until grainy…
add 1 tbsp of water and pulse again… keep adding a 1 tsp of water at a time until it forms a ball/…

 


Roll into a ball and place in plastic bag… refrigerate for at least 30 minutes… best if over 4 hours.

If you don’t have a really small cookie cutter… make one out of an aluminum can.  Just cut it into a strip… then fold back both edges (gently)

Fold it one more time to the back (like you would make a fan). 

Tape the two ends together to make a fish shape… then bend as needed…

 

Make different sizes if you would like!

Roll the chilled dough out and cut. 


Bake these on a parchment lined baking sheet at 350 degrees for about 15 minutes… they should be golden brown and crispy!  These are so much better in taste and nutrition than the store bought goldfish.  Just look at the nutritional comparison: Look especially at Vitamins…. the homemade variety packs in a good 60% of Vitamin A whereas the PF only has 2%.  How can they say this is 1/3 a serving of veggies?  False advertising if you ask me!
