Truth: I am usually a lunchtime slacker. This simply means that I rarely take a break to make myself a decent lunch. I know I’d be much more productive if I actually took time to take a lunch break everyday, but in order to do this I need lunch items that are easy to prepare. I’ve found some great options recently that can be cooked straight from the freezer to the oven. One thing that I love to eat is a hot sandwich and my new favorite hot sandwiches are the Hand Crafted Artisan Melts from the Better Bakery. My favorite is the Better Bakery Chicken & Bacon Club. I love how cheesy it is and the bread is just the right texture. It’s like eating a sandwich from a fancy bakery, but easily prepared from home. Yay for wearing PJs while eating them (if I want to). For the whole meal experience I like to serve them with this recipe for Parmesan Roasted Potatoes.
I found the Better Bakery Products from Walmart in the Frozen foods section while on a recent grocery run. These new packages caught my eye and they looked delicious too! Potatoes are the perfect pair for a hot sandwich! These Parmesan Roasted Potatoes can be baked at the same time as the Better Bakery Chicken & Bacon Club sandwich. This makes it much easier to prepare. My whole family enjoyed this meal, but if you want to serve just one or two you can easily scale down the recipe.
Easy Parmesan Roasted Potatoes

Ingredients
- 1 bag frozen diced "hash-brown" potatoes
- 1/2 cup fresh grated parmesan cheese
- 2 Tbsp . olive oil
- 1 tsp . garlic
- 1 tsp . dried herbs like basil or parsley
Instructions
- Preheat oven to 375. Place frozen potatoes into a large bowl and toss with the olive oil, garlic, 1/4 cup of the parmesan cheese and the dried herbs. Pour the mixture onto a sprayed baking sheet evenly. Cook for 20-25 minutes. Turn the heat to a low broil and bake for another 10 minutes or until the potatoes are starting to brown on the edges. Take out of the oven and sprinkle the rest of the parmesan cheese on top. Serve and enjoy!
