I am always on the search for easy and healthy snacks. I am in love with snow cones and I am pretty sure that if a snow cone stand were open in the winter I’d be right there ordering one! Snow Cones are not very healthy though… just sugar water on top of the wonderful shaved ice texture. I wanted to create the same texture of a snow cone, but I wanted it to be healthier and include REAL fruit. That’s when I found the Outshine Frozen Fruit Bars! I knew that I could make a simple shaved ice or “Granita” out of these bars easily which would be so much healthier!!!
Outshine Bars come in many different flavors. They all looked great and in the end I decided to try the Strawberry and Coconut Waters with Banana! I loved both of these varieties and my girls did too! The Coconut Waters with Banana has only 60 calories and the Strawberry has only 70 calories! These make great after school snacks that won’t ruin my kids’ appetites!
To make the Granitas just simply take a fruit bar and a vegetable peeler and start “shaving” the fruit bar with the vegetable peeler. Make sure to get it over the bowl and you might need a few paper towels underneath just in case.
I garnished my Granita with a dollop of Greek yogurt and some fruit! I think that this is not only a great after school snack, but would also be fancy enough for a dinner party. Make them ahead of time the same day and keep them frozen until ready to serve. (Add the fruit and yogurt after taking out of the freezer.)
I like this even more than a snow cone… and that is saying a lot!
