One of my favorite ingredients to put on a sandwich is avocado. It pairs so well with turkey or chicken and gives a creamy texture to any sandwich without heavy condiments. I was thinking about a chicken sandwich with avocado the other day and thought about trying it with arepas instead of traditional bread. An arepa is a corn flatbread that is popular in Venezuela and it makes a great alternative to bread for a unique sandwich! It’s super easy to make arepas with P.A.N. cornmeal and some water.
Arepas have opened up a new world of creative sandwich ideas for me! Even though a chicken and avocado sandwich is a longtime favorite of mine, making it with an arepa gives the sandwich a whole new taste. I think I like this version just as much or even better than the original. The texture of the arepa is soft and chewy which pairs well with the chicken and avocado. I use P.A.N. cornmeal for my arepas because P.A.N. cornmeal is the number one cornmeal in South America. P.A.N. cornmeal is rich in nutrients and is very versatile.
Making arepas is a simple process for something so tasty and filling! Just mix the dough, make little patties and then cook them in a skillet! Once they are cool they are ready to fill with your favorite sandwich ingredients. I love splitting them in half and stuffing them with whatever I want. Any sandwich can be re-made with an arepa. Try it with roast beef, turkey or ham… the sky is the limit. They can easily make a delicious grilled cheese or other cooked sandwich too. This recipe for Chicken and Avocado Arepa Sandwiches is one of my favorites.
Chicken and Avocado Arepa Sandwich
Ingredients
- 2 cups P.A.N. Cornmeal
- 2 cups water
- 1 tsp . salt
- For filling:
- 1/2 salsa
- 1/2 cup sour cream
- 1 avocado sliced
- 1 tomato chopped
- 2 chicken cooked or grilled breasts cubed
Instructions
- Make arepas using the P.A.N. cornmeal, salt and the water. Mix P.A.N. cornmeal, salt and water in a medium mixing bowl and mix together until combined. Let rest for 3 minutes before cooking. Preheat a skillet or griddle to medium high heat. Roll cornmeal mixture into 10 ball and flatten each ball into a 3 inch round patty. Place flattened dough on cooking surface and cook on each side for 5 minutes. Let each arepa rest for a few minutes and carefully slice each one in half to fill with the sandwich ingredients.
- To assemble sandwiches:
- First mix together the sour cream and salsa in a small bowl. Place avocado into the arepa first followed by chicken and tomatoes. Drizzle the salsa mixture into the arepa. Serve and enjoy!
