When I was around 12 I decided to make a batch of brownies “all by myself”. I grabbed one of the brownie mix boxes and went to work. I gathered up all my supplies to make sure I had everything. Oil.. check. Water… check. Eggs… check. I made sure to follow the directions perfectly… at least in my mind. Around ten minutes later I knew something had gone terribly wrong. All you could see at the top of the mixing bowl was oil. So. Much. Oil. My parents realized the mistake was that I was reading 1 1/4 cup as eleven quarter cups! So basically I added around 2 1/2 cups of oil to the brownie mix! We still laugh about that to this day! Thank goodness for Home Ec. and a little more practice in the kitchen because my family loves brownies and they beg me to make them all the time! These Low Calorie Mocha Mint Brownies are easy to whip up and are diet friendly! I used SPLENDA® Granulated in place of sugar and no one could tell!
I love using SPLENDA® Granulated in baking recipes because I just replace the sugar with the exact amount of Splenda. It’s so easy! I think it’s funny that these have no oil in them considering my first failed attempt at brownies!
Low Calorie Mocha Mint Brownies!

Ingredients
- 3/4 cup organic all purpose flour, affiliate
- 1/4 cup plus 2 tbs cocoa powder, affiliate
- 1 cup SPLENDA® Granulated, affiliate
- 2 tsp coffee extract, affiliate
- 1/4 tsp sea salt, optional; affiliate
- 1/3 cup unsweetened applesauce
- 3 egg whites, well beaten
- 4 squares of 80% dark chocolate or above chopped, affiliate
- 1 tsp mint extract or 1 drop peppermint oil, affiliates
- optional: peppermint candy crushed to sprinkle
Instructions
- Combine the flour, cocoa, SPLENDA® Granulated, and salt and mix well. Stir in the applesauce, egg whites, and mint extract or peppermint oil.
- Spray an 8-inch square pan (affiliate) with non-stick cooking spray - making sure to cover all the edges and bottom of the pan. Spread the batter in the pan evenly and add the chopped chocolate. Bake at 325° F for 22-25 minutes, or just until the edges are firm and the center is almost set. Let it cool once finished baking and cut into 2 inch squares. Add sprinkles of peppermint candy if desired. Enjoy!

These taste so good! I will warn you that they are a very dark chocolate taste (which I love). So if you like your brownies to be a darker chocolate then this is perfect! These are also very thin… so I would suggest doubling up the recipe too!
