Today was finally a cooler day and it put me in the mood for a hot bowl of soup! I’ve been trying to come up with recipes that use up the items in my pantry so that we don’t waste anything and this 3 Can Cheesy Taco Soup was perfect for that! It was so easy to make and the whole family loved it. It definitely reminded us of eating a taco and I know we will be making this again.
Of course the soup starts out with 3 canned items. A can of Wolf Chili, a can of Hunt’s diced tomatoes and a can of Ro*Tel. This was the base to the soup and I added some fresh onions and other fresh items to the final product. I found all these ingredients, including the fresh produce, easily at Walmart. I love their selection of fresh produce!
This is literally one of those recipes that is as easy as throwing everything in the pot and it comes out tasting like you took all day to make it! So yummy!
3 Can Cheesy Taco Soup
Ingredients
- 1 can RO*TEL mild
- 1 can Wolf Chili
- 1 can Hunt's diced tomatoes
- 1 8 oz . block processed cheese product
- 1 package of low sodium taco seasoning or use your own
- 1/2 small onion diced
- 2 cups chicken or beef broth
- toppings optional:
- tortilla strips
- sour cream
- anything you like on a taco
Instructions
- Add all all the main ingredients (excluding toppings) into a large pot. Cook on high until contents are starting to boil and turn the heat down to low and cook for an additional 15 minutes. Make sure to stir well every 5 minutes. Pour into bowl and top with toppings if desired.

Just saw this on the SoFab Food Facebook page and I had to come pin it because it looks SO FLIPPIN' GOOD! And for those of us that eat low carb (maybe commenter NoNo does too?) it can easily be altered by using cooked ground beef instead of the Wolf Brand No Bean chili since that has 18 grams of carbs.

The 1 can Wolf Chili is that with beans or without? Do you know the carbs count?
