Since I started my diet a month ago I have been consuming much more tea.  It is packed with flavor but has zero calories.  It’s truly a dieters best friend!  It also has many health benefits!   My favorite teas come from the Bigelow line of teas.  It’s hard to choose just one as my favorite because I like them all at different times.  I recently tried the Perfect Peach Herb Tea and fell in love with it.  My girls also like it as well and so we enjoy it in the afternoons.  Be sure to check out the Peach Shortcake Recipe below that I made recently to go with the Bigelow Perfect Peach Tea!

Since I have quite a few Bigelow tea boxes in my pantry I decided that it was time to make myself a tea drawer.   This drawer turned out so pretty and I can display it all the time.  It’s nice to have all of my teas in one place so that everyone can pick out their favorite to enjoy!   You can see my most recent tea shopping trip on google plus!

To make the tea drawer I used a painted drawer I found at Hobby Lobby.  I was going to paint my own drawer, but this one was so pretty and much like the one I had in mind.  I just needed to divide it into sections somehow.   I let my husband cut out a thin strip of wood into 3 sections.  I covered each section with scrapbook paper.

To make sure each section stayed in place I cut out a little bit of shelf liner (the kind that has a grip to it) and glued it down.  I found that it didn’t take much and they stayed in place.  If you try this yourself make sure to use a strong glue!

Now I can display my tea collection all the time!

Now for the recipe!!!  Doesn’t this Peach Shortcake look amazing?   I didn’t want to spend a lot of time making a dessert because with my diet I can’t have any “extras” for now and I tend to nibble too much.  So I used the little sponge cakes you can find at Walmart instead!  They worked out great!

Ingredients

  • I package Individual sponge cakes )usually sold by the strawberries)
  • 1 can of sliced peaches
  • Homemade Whipped cream with 1 tsp. of almond extract, recipe included below
  • cinnamon for dusting

Instructions

  1. Once you have your whipped cream made just place the cake in the middle of a plate and put the peaches in the middle. You can also add some peaches around the sides. Pipe on the whipped cream using a large star tip or use store bought whipped cream. Sprinkle on some cinnamon and enjoy!

Notes

To make the whipped cream combine 1 cup of heavy whipping cream with 1/4 cup of powdered sugar and 1 tsp. of almond extract (you can replace the almond with vanilla if you don't like the almond). Beat on high until stiff peaks form. Enjoy!

I wish you could smell how wonderful the Bigelow Perfect Peach smells when you open it up!   I love that Bigelow packs their teas in foil lined pouches to ensure that they don’t lose flavor or aroma!

Drink it hot or cold.  I like it both ways.  It was still a little chilly so I drank mine warm.

My girls enjoyed the tea too, but they had it sweet!   I also brew the tea a bit weaker for them.

It was the perfect way to enjoy the afternoon with my girls!    What is your favorite flavor of Bigelow tea?

Be sure to come back in the next month because I have been selected by Bigelow Tea to got to South Carolina to tour the Bigelow tea company and tea plantation!  I can’t wait and I am so honored to have this opportunity.  Bigelow is my favorite brand of tea and I will be sharing everything that goes on with all of you!
