Turkey Ham Cobb Salad

So how am I doing on the Champions For Kids Jennie-O Make the Switch Challenge?  In my original post about Making the Healthy Switch I shared how I was willing to give up chips this month and use the money I saved to give to kids in need.  I am glad to say that we have not bought any chips this month!  Yay!  We used the money we saved to donate lots of Jennie-O Turkey products and other healthy foods to kids in need!!!  I was also inspired to create some yummy healthy recipes like the Sour Cream and Onion Microwave Veggie Chips I shared on Wednesday.   We have been eating them to replace the un-healthy ones.  They are so good!  I also made a healthy Turkey Ham Cobb Salad with some Jennie-O Turkey ham.  Yummy!

Needless to say… my family and I are enjoying lots of healthy foods and were blessed to be able to donate even more healthy foods to those in need.

Here is what we did today!   We donated to the Master’s Market which is a Food and Clothing Pantry that is operated by the church that I was a part of growing up!   I loved being able to teach my girls what giving is all about by letting them be a part of this donation.

Here is the food that we were able to buy mainly because of giving up chips this month!   I am astonished that we were able to give away so much.  I can rest assured that the kids that get these food items will be eating very healthily. The Jennie-O Ground Turkey is high in nutrients and low in fat.  I am particularly fond of the Jennie-O Turkey Ham which tastes just like ham- or even better to me ;)!!!   I also love using the ground turkey for anything that I would normally use ground beef for.  It is so much healthier!!!   I also included some Jennie-O hot dogs, Jennie-O Turkey Sausage,  Jennie-O Turkey and Gravy, whole wheat pastas, canned beans, and apple sauce in our donation.

Here is my brood plus my nephew “The Monkey” in front of the Master’s Market building.  They were so excited to be a part of this!!!

The man helping them get everything inside and into the freezer was so nice and thankful.  He told the girls that the Jennie-O Turkey and Gravy looked so good and he knew that whoever got it would really like it!   They giggled and nodded the whole time and then we were off.  I think that we have really re-enforced the idea that giving doesn’t have to be something that is hard or difficult, but something that we can do simply and with a glad heart!

Now onto the recipe…

We have really been enjoying the Jennie-O turkey products lately.  One taste of the Turkey Ham and I was sold!  I knew that it would be perfect for a mouth-watering Turkey Ham Cobb Salad!

The mixture of all of these flavors together is so amazing!  Traditional versions of Cobb Salad usually call for chicken and/ or bacon to be added.  By taking out the bacon and replacing it with the Jennie-O Turkey Ham I was able to reduce the fat significantly.  I also love the flavor that the turkey gives this salad.

 The turkey has a really good smoked flavor to it… it pairs perfectly with this salad!  To make the little round circles I just sliced the ham really thick, then I took a small circle cookie cutter and cut circles (really long cylinders) out of it… then I sliced that up.  You can cut it up any way that you want… I just thought it looked nice on the plate!

{Turkey Ham} Cobb Salad

{Turkey Ham} Cobb Salad

Ingredients

  • 1/3 package Jennie-O Turkey Ham, sliced or diced
  • 2 Avocados sliced
  • 2 hard boiled eggs sliced
  • 2 cups chopped lettuce
  • 1 cup baby spinach
  • 2 tomatoes thinly sliced
  • 1/2 cup blue cheese or reduced fat blue cheese

For a simple Balsamic/ Garlic Vinaigrette:

  • 1/4 cup Balsamic Vinegar
  • 1/4 cup Olive Oil
  • 1 or 2 cloves of garlic minced
  • salt to taste

Instructions

  1. Place the lettuce and spinach on the plate first then arrange the rest of the ingredients on the plate. If you are making the Vinaigrette to go with it just mix those ingredients and pour onto the salad. Serves 4 as a side salad and 2 as a full salad. Enjoy!
