1box of Campbell's Soups for Easy Cooking in Mexican Tomato
1 15oz. can of fire roasted tomatoesdo not drain
4cupschicken broth
1 15oz. can of black beans rinsed and drained
1cupshredded cooked chickenI use chicken from a rotisserie chicken for this to make it easy
1/2tsp. garlic
2tsp. chili powder
1small onion chopped
1bag tortilla strips
suggested toppings:
cheese
tomatoes
avocado
lime wedges for spritzing
cilantro
sour cream
Instructions
Add all ingredients except tortilla strips and toppings to a large pot. Bring to a boil and then turn the heat down to a simmer. Simmer until the onions are translucent or about 25 minutes. Serve with your choice of toppings. Makes 5 to 6 servings
