Quick and Easy Chicken Tortilla Soup

Ingredients

  • 1 box of Campbell's Soups for Easy Cooking in Mexican Tomato
  • 1 15 oz . can of fire roasted tomatoes do not drain
  • 4 cups chicken broth
  • 1 15 oz . can of black beans rinsed and drained
  • 1 cup shredded cooked chicken I use chicken from a rotisserie chicken for this to make it easy
  • 1/2 tsp . garlic
  • 2 tsp . chili powder
  • 1 small onion chopped
  • 1 bag tortilla strips
  • suggested toppings:
  • cheese
  • tomatoes
  • avocado
  • lime wedges for spritzing
  • cilantro
  • sour cream

Instructions

  • Add all ingredients except tortilla strips and toppings to a large pot. Bring to a boil and then turn the heat down to a simmer. Simmer until the onions are translucent or about 25 minutes. Serve with your choice of toppings. Makes 5 to 6 servings
