These Apple Waffles with fresh diced apples are simply amazing! These are are a comforting breakfast food with sweet apples and a touch of cinnamon. Add in a touch of Sweet Cinnamon Butter to melt into the waffle and top with syrup.

Ingredients
2cupsbaking mix Gluten Free version below
11/3cups milk
2Tbsp.melted butter or vegetable oil
1largeegg
1diced apple
1/3cupsugar
1tsp.cinnamon
1tsp. vanilla extract
1cupfresh or cooked diced apples for toppingoptional
1tsplemon or orange zestoptional
Gluten Free Option
1boxKing Arthur Pancake Mix instead of baking mix
2 1/2cupsmilk (instead of the 1 1/3rd in original recipe)
2largeeggs
4Tbspmelted butter
add in and prepare the rest as written in original recipe
Sweet Cinnamon Butter
1/2cup butter (softened, salted)
1/3cupconfectioner's sugar
1tspground cinnamon
Instructions
For the Waffles
Heat waffle iron; grease with vegetable oil or shortening (or according to waffle manufacturers directions.
In a large mixing bowl whip the egg and slowly add in the melted butter. Butter should not be hot when added in. Alternately use vegetable oil. Add in the vanilla next.
Stir in rest of ingredients until blended. Pour onto center of hot waffle iron until it covers the bottom with a thin layer. Close lid of waffle iron.
Bake about 5 minutes or until steaming stops. Carefully remove waffle. Serve with sweet cinnamon butter and diced apples (optional). We also use a bit of syrup sometimes.
For the butter
Beat the butter on high with a mixer until creamy.
Add confectioner's sugar 1/2 cup at a time until blended. Add cinnamon and continue mixing until creamy. Serve on top of waffles.
