4chicken breasts that are cooked and slicedgrilled is really good with this
3cupsfresh spinach or 1 8 oz. package frozen spinach thawed and drained
1/2cupartichoke hearts drained and chopped
For the sauce:
2cupsheavy cream
2cupsfresh grated parmesan cheesefinely grated is best
2Tbsp. butter
2clovesgarlic minced
3cupsfresh spinach or 1 8 oz. package frozen spinach thawed and drained
1/2cupartichoke hearts drained and chopped
salt and pepper to taste
Instructions
First heat a saucepan on low heat and add all sauce ingredients. Cook for around 15 minutes and set aside. Meanwhile heat a large skillet on medium heat and add about 1 Tbsp. of water and spinach. Cover and cook until the spinach loses around half of it's volume if it is fresh or until heated if frozen kind. Then add the chicken, noodles, artichokes and sauce to the skillet and serve. Serve with a sprinkling of fresh parmesan!
