Asian-Inspired Tuna Salad in Cucumber Cups

  • 1 large cucumber
  • 1 5 oz . can tuna
  • 2 Tbsp . Mayonnaise
  • 1 tsp . soy sauce
  • 2 tsp . Sriracha sauce
  • 1 tsp rice wine vinegar
  • 1 shallot chopped
  • 1 tsp . Simply Asain spice blend and a little more for sprinkling


  • Take the cucumber and cut into 1 inch slices and hull out a small portion from the middle with a melon baller. Set aside and in a medium bowl combine the rest of the ingredients and mix well. Spoon mixture into the cucumber cups and sprinkle a little more of the spice blend. Serve immediately or refrigerate for a couple of hours.
