I always struggle a little after the holidays to get back into our routines. Especially deciding what to fix for everyone at dinner. I am always trying to think of quick and easy meals for my family for weeknights. This Fiesta Mac & Cheese recipe is a great combo of Horizon Organic Classic Mac mixed with corn, onions, black beans and seasoning! My family loves it and I have been making it often because it’s so easy to whip up!
The Horizon Organic Classic Mac is so easy to change up with different ingredients. Horizon has introduced the new MAC-N-ATOR which is the mac-n-cheese recipe generator! Just simply select the ingredients that are already sitting at home and the MAC-N-ATOR will generate a mac & cheese recipe using Horizon Mac & Cheese. I love throwing all kinds of veggies in it to make a new dish every time. The corn and black beans in this Fiesta Mac & Cheese version really tastes great with the cheesy flavor of the Horizon Organic Classic Mac.
We also add different toppings to our own tastes like cilantro, tomatoes and sour cream!
1 box prepared Horizon Classic Mac & Cheese (prepare according to directions on the box)
1/2 cup corn (canned or frozen)
1/2 canned black beans drained and rinsed
1/2 cup chopped onions
1/2 Tbsp. butter
1/8 tsp. Cumin
1/2 Tbsp. Chili Powder
Melt butter in a medium sized skillet and add the onions. Cook until the onions are translucent then add the beans and corn to the skillet and cook thoroughly. Add the cumin and chili powder to the Horizon Classic Mac & Cheese and stir together. Add the onions, beans and corn to the Horizon Classic Mac and stir everything together. Serve while warm and top with the toppings if desired. Enjoy!
